Ingredients

  • 4 TBSP butter
  • 1/2 lb bacon, cooked
  • 1 cup onion, diced
  • 1 TBSP jalapeno
  • 1/2 cup red pepper
  • 1 LB potatoes, diced
  • 2 TSP salt
  • 3/4 TSP black pepper
  • 1 cup chicken broth
  • 1 cup water
  • 2 cups corn kernals
  • 3 oz ham, diced
  • 1 cup milk
  • 1 cup heavy cream

Steps

  • Melt butter in large pot
  • Add bacon, onion and jalapeno. Cook until onion has softened, about 5 minutes
  • Add red pepper, cook 10 minutes
  • Add potatoes, 3/4 TSP of salt, pepper, chicken broth and water
  • Bring to a boil, reduce heat to simmering and cook, covered, until potatoes are soft, about 30 minutes
  • Put 1 cup of corn into a blender and blend to a thick puree
  • Add pureed corn, reamining kernals, ham, milk, cream and remaining salt to soup
  • Replace cover and cook until heated through, about 10 minutes
