Ingredients
- 4 TBSP butter
- 1/2 lb bacon, cooked
- 1 cup onion, diced
- 1 TBSP jalapeno
- 1/2 cup red pepper
- 1 LB potatoes, diced
- 2 TSP salt
- 3/4 TSP black pepper
- 1 cup chicken broth
- 1 cup water
- 2 cups corn kernals
- 3 oz ham, diced
- 1 cup milk
- 1 cup heavy cream
Steps
- Melt butter in large pot
- Add bacon, onion and jalapeno. Cook until onion has softened, about 5 minutes
- Add red pepper, cook 10 minutes
- Add potatoes, 3/4 TSP of salt, pepper, chicken broth and water
- Bring to a boil, reduce heat to simmering and cook, covered, until potatoes are soft, about 30 minutes
- Put 1 cup of corn into a blender and blend to a thick puree
- Add pureed corn, reamining kernals, ham, milk, cream and remaining salt to soup
- Replace cover and cook until heated through, about 10 minutes
