• 6 eggs
  • 1/4 cup mayonnaise
  • 1/2 TBSP dijon mustard
  • 1/2 TBSP grain mustard
  • 1/4 TSP vinegar
  • 1 TSP hot sauce
  • 1 TSP chives
  • salt and pepper to taste
  • 1 cup panko bread crumbs
  • 1/2 cup flour
  • 2 eggs for dipping


  • Boil eggs in saucepan 6-9 minutes with enough water to cover all eggs
  • Remove from heat and rinse with cold water, then remove all shells
  • Slice eggs in half length wise, removing the yolks and place yolks into small bowl
  • Add mayonnaise, vinegar, grain and dijon mustard, hot sauce, chives, salt and pepper to the yolks and mix until well combined
  • Season bread crumbs with salt and pepper
  • Coat egg whites in flour, then dunk in the two remaining beaten eggs, then press into bread crumbs on both sides
  • Fry egg whites for 10-20 seconds in hot oil until golden brown
  • Evenly disperse yolk mixture into each egg white
  • Sprinkle with paprika and enjoy!
