Ingredients
- 6 eggs
- 1/4 cup mayonnaise
- 1/2 TBSP dijon mustard
- 1/2 TBSP grain mustard
- 1/4 TSP vinegar
- 1 TSP hot sauce
- 1 TSP chives
- salt and pepper to taste
- 1 cup panko bread crumbs
- 1/2 cup flour
- 2 eggs for dipping
Steps
- Boil eggs in saucepan 6-9 minutes with enough water to cover all eggs
- Remove from heat and rinse with cold water, then remove all shells
- Slice eggs in half length wise, removing the yolks and place yolks into small bowl
- Add mayonnaise, vinegar, grain and dijon mustard, hot sauce, chives, salt and pepper to the yolks and mix until well combined
- Season bread crumbs with salt and pepper
- Coat egg whites in flour, then dunk in the two remaining beaten eggs, then press into bread crumbs on both sides
- Fry egg whites for 10-20 seconds in hot oil until golden brown
- Evenly disperse yolk mixture into each egg white
- Sprinkle with paprika and enjoy!
